What is raw vegan?

A raw vegan eats only plant foods that have not been heated above roughly 40 to 48°C, depending on the tradition followed. The diet consists of fruit, vegetables, nuts, seeds, sprouted grains and legumes, prepared without cooking.

Where the term comes from

Raw eating predates veganism as a movement, with roots in 19th-century European natural hygiene traditions. The raw vegan combination became widely known in the 1990s and 2000s.

What is the temperature threshold?

There is no single agreed figure and no governing body. 40°C, 42°C, 46°C and 48°C all have adherents. If someone states a specific number, it indicates which tradition they follow.
